Elegance, freshness and the mineral character of Champagne

Pascal Doquet’s Champs Libres Blanc de Blancs Extra Brut reflects a clear vision of Champagne: highlighting Chardonnay and the character of its origins through careful winemaking and a respectful approach to the vineyard.

Made from organically grown Chardonnay grapes, this Champagne combines freshness and refinement with delicate pastry notes and a mineral finish. Its Extra Brut dosage emphasises precision and vibrancy, allowing the wine’s natural character to shine without making the palate feel heavy.

The winemaker’s notes – Yuri Stefani

A Champagne that favours finesse over richness. Chardonnay brings freshness, energy and aromatic definition, while ageing on the lees contributes complexity and texture. On the palate, it is balanced and lively, with bright acidity and a clean finish recalling fresh fruit and mineral notes.

Versatile at the table, it also has enough character to be enjoyed on its own as an aperitif.

Why we chose it

For its focused, food-friendly style and its ability to combine freshness with complexity. Pascal Doquet’s commitment to expressing individual terroirs and organic viticulture makes this an appealing choice for anyone looking for a precise, elegant Champagne that is not dominated by dosage.

The terroir

The wine comes from Champagne, with Pascal Doquet’s work centred in Vertus, in the southern part of the Côte des Blancs. Chardonnay thrives in this area, where it can develop freshness, tension and finesse. The region’s chalk-rich soils contribute to the taut, mineral profile often associated with Blanc de Blancs Champagne.

The winery

Pascal Doquet runs a family estate in Vertus and has developed his own project around expressing individual terroirs and working with respect for the environment. Organic certification and careful vineyard management are central to this philosophy, which aims to produce expressive wines with a strong sense of place.
