Chardonnay purity in Pacaud Vignerons Monsieur Jacques

Pacaud Vignerons Monsieur Jacques Bourgogne Blanc is a Burgundy Chardonnay focused on precision, freshness and finesse. The grapes come from vineyards in the communes of Leynes and Saint-Amour, in the Mâconnais, and are handled with a minimal-intervention approach.

Hand harvesting, direct pressing of whole bunches, indigenous-yeast fermentation and nine months of ageing on fine lees in stainless-steel and concrete vats allow the wine to retain its aromatic purity and natural tension, without the influence of oak.

The winemaker's notes

A Bourgogne Blanc that I appreciate for its immediacy and precision of fruit. It is a fresh, delicate and beautifully balanced Chardonnay, where citrus and white-fleshed fruit meet a pleasant mineral character. The use of stainless steel and concrete keeps the wine clean and dynamic, allowing the character of the terroir to come through.

— Yuri Stefani

Why we chose it

We chose Monsieur Jacques because it is a particularly interesting example of Burgundy Chardonnay made without trying to add complexity through oak.

The wine is built around freshness and precision, while ageing on fine lees provides additional texture and depth. It is a highly gastronomic Bourgogne Blanc, naturally suited to food while remaining remarkably clean and immediate on its own.

The cuvée is named in honour of the uncle of brothers Julien and Sébastien Pacaud, who have developed a young family estate whose first estate-made vintage was produced in 2014.

The terroir

The grapes for Monsieur Jacques come from the communes of Leynes and Saint-Amour, in the Mâconnais. The vineyards are planted on ancient soils derived from Lower Triassic sandstone, with deep marl and alluvial scree. The plots have different exposures, including south, south-west and north-facing sites.

These conditions are particularly well suited to Chardonnay, producing wines where fruit is balanced by freshness and a precise mineral character.

The winery

Pacaud Vignerons is based in Chasselas, between the Mâconnais and Beaujolais, and is run by brothers Julien and Sébastien Pacaud. The family has worked the vineyards for three generations, while estate winemaking began in 2014 when Julien produced the first vintage. Sébastien joined the project in 2021. The estate covers around 13 hectares across several communes in the Mâconnais and Saint-Amour.

Their cellar approach is deliberately low-intervention: the white wines begin with direct pressing and are fermented with indigenous yeasts without added sulphur during vinification.
